Ingredients
2 cups cooked pasta (elbows or rotini)
½ lb lean ground beef or turkey
1 tbsp taco seasoning
½ cup corn kernels
½ cup black beans, drained
½ cup shredded cheddar cheese
¼ cup salsa
¼ cup sour cream or Greek yogurt
Instructions
- Cook pasta; drain and set aside.
- In same pot, brown ground beef and stir in taco seasoning.
- Add corn, beans, salsa, and pasta.
- Mix in sour cream; sprinkle cheese before serving.

- Top with crushed tortilla chips for crunch!
