A flavor-packed twist on pasta that makes taco lunch portable! Serve warm or chilled.

Ingredients

  • 2 cups cooked pasta (elbows or rotini)

  • ½ lb lean ground beef or turkey

  • 1 tbsp taco seasoning

  • ½ cup corn kernels

  • ½ cup black beans, drained

  • ½ cup shredded cheddar cheese

  • ¼ cup salsa

  • ¼ cup sour cream or Greek yogurt

Instructions

  • Cook pasta; drain and set aside.
  • In same pot, brown ground beef and stir in taco seasoning.
  • Add corn, beans, salsa, and pasta.
  • Mix in sour cream; sprinkle cheese before serving.

Kid Tip

  • Top with crushed tortilla chips for crunch!
