Ingredients

  • 8 oz rice noodles or lo mein noodles

  • 1 lb medium shrimp, peeled and deveined

  • 1 tbsp sesame oil (or olive oil)

  • 2 cloves garlic, minced

  • 1 cup broccoli florets

  • 1 cup sliced bell peppers (red & yellow)

  • 1 carrot, julienned

  • 3 tbsp soy sauce (low sodium)

  • 1 tbsp oyster sauce (optional for extra flavor)

  • 1 tbsp honey or brown sugar

  • ½ tsp ground ginger

  • 1 tbsp cornstarch mixed with 2 tbsp water (optional to thicken)

  • Sliced green onions and sesame seeds for garnish

Instructions

  • Cook noodles according to package directions, drain, and set aside.
  • Heat sesame oil in a large skillet or wok over medium-high heat.
  • Add shrimp and cook 1–2 minutes per side until pink and opaque. Remove and set aside.
  • In the same pan, sauté garlic, broccoli, peppers, and carrots for 3–4 minutes until crisp-tender.
  • Add soy sauce, oyster sauce, honey, and ginger to the pan. Stir to combine.
  • Return noodles and shrimp to the pan, toss well, and coat with sauce.
  • Optional: Stir in the cornstarch slurry and cook 1–2 minutes to thicken the sauce slightly.
  • Garnish with sesame seeds and green onions before serving.
