Ingredients
8 oz rice noodles or lo mein noodles
1 lb medium shrimp, peeled and deveined
1 tbsp sesame oil (or olive oil)
2 cloves garlic, minced
1 cup broccoli florets
1 cup sliced bell peppers (red & yellow)
1 carrot, julienned
3 tbsp soy sauce (low sodium)
1 tbsp oyster sauce (optional for extra flavor)
1 tbsp honey or brown sugar
½ tsp ground ginger
1 tbsp cornstarch mixed with 2 tbsp water (optional to thicken)
Sliced green onions and sesame seeds for garnish
Instructions
- Cook noodles according to package directions, drain, and set aside.
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add shrimp and cook 1–2 minutes per side until pink and opaque. Remove and set aside.
- In the same pan, sauté garlic, broccoli, peppers, and carrots for 3–4 minutes until crisp-tender.
- Add soy sauce, oyster sauce, honey, and ginger to the pan. Stir to combine.
- Return noodles and shrimp to the pan, toss well, and coat with sauce.
- Optional: Stir in the cornstarch slurry and cook 1–2 minutes to thicken the sauce slightly.
- Garnish with sesame seeds and green onions before serving.
